Description: This exceptional chef's knife is the work of Jeremy Spake of Portland, Oregon. Jeremy has been making knives since 2010. His work is heavily influenced by Scandinavian knives. As he has begun making chef's knives, he has combined these Scandinavian influences with inspiration drawn from Japanese chef's knife. The results have been truly spectacular.
This chef's knife is likely to become the primary knife used in your kitchen. The sleek blade provides finger clearance while being extremely dexterous. The nicely arced blade has a perfect shape for an efficient rocking chop. Whether chopping onions, mincing garlic, or slicing meats, this knife will be a perfect choice.
Jeremy hand forged the blade from 52100 carbon steel. Many knife makers and knife users include 52100 carbon steel among their favorite steels. 52100 takes on a superior cutting edge that just won't quit. The thin blade features a complex compound S grind. This grind style combines a strong, high performing edge with a slight hollow which helps food not stick to the sides of the knife.
The stacked handle combines African blackwood (Dalbergia melanoxylon) with stabilized curly koa (Acacia Koa). White paper Micarta spacers add a nice contrast. The choice of woods is truly exceptional. It is nicely rounded and swells at the palm, moves into a slimmer waist, and swells again at the end of the handle. A phosphor bronze bolster seals the front of the handle.
