Description: One of the most used knives in the kitchen is the paring knife. Whether opening packages, cutting fruit and vegetables or decorating pastries you will find this beautiful little knife as useful as it is attractive. Handmade by Jim Arbuckle, this paring knife is handmade and one-of-a-kind - there's not another one like it in the world!
This knife was hand-forged by Arbuckle beginning with an SG2 powdered metallurgical (PM) stainless steel core (hagane). The smaller crystalline size of this PM steel results in superior edge holding when compared to nearly any stainless steel. The central core is surrounded by many layers of deeply etched nickel damascus. It was hardened and triple tempered to Rc 64 for excellent edge retention. The blade is distal tapered to lighten it and create a perfect balance.
A carved 416 stainless steel bolster separates the blade from the contoured bocote (Cordia spp.) wood handle. A black fiber spacer enhances visual contrast and provides a buffer for movement of the wood. The handle is perfectly contoured for a secure, comfortable grip.
