Description: Journeyman Smith Keith Fludder resides in New South Wales, Australia. He started making knives in 1989 is now a full time maker. Keith's knives are works of art that excel in performance. This chef's knife really shows his expertise and his understanding of chef's knife geometry really shines through.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The 11 inch blade was hand forged from W2 carbon steel. The thin blade will provide a perfect slice each time with virtually no wedging. Though the gun blued finish provides limited rust resistance, because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is not one that you'll want to put down.
The traditional octagonal wa handle is formed from ringed gidgee (Acacia cambagei). Gidgee is a unique and rare Australian hardwood. This difficult to find timber is highly sought after by knife makers. It is known for its depth of color, beautiful figure and extreme hardness. Gidgee is classified as the 3rd hardest wood in the world. A nickel silver spacer provides contrast. A black G-10 'bolster' seals the front of the handle from absorbing water during use.
