Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives. This set of two culinary knives is absolutely spectacular. The knives are sure to become the knives selected first in your kitchen.
Both the chef's knife and utility knife featured matching handles. The stacked handles combine ancient walrus ivory bolsters, along with stabilized redwood burl and masur birch. The combination is immediately captivating.
The chef's knife has a 7-1/3 inch long blade with plenty of finger clearance when chopping over a cutting board. The finger choil makes it easy to hold the knife either in a pinch grip or further back on the handle.
The utility knife is a perfect choice for slicing fruits and vegetables as meats and proteins. The detail-oriented K-tip provides tremendously accurate cuts.
Greger ground the blades from damascus hand forged by Michigan bladesmith Randy Hoss. Randy combined Japanese Hitachi Blue #2 (aogami #2) with 410 stainless steel. The heat blued steel is beautiful! Because the blade is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation.
The knives are accompanied by a hand formed leather sheath designed to hold both knives.
The chef's knife weighs 8.2 oz and has a blade length of 7.4 inches (7-1/4" long cutting edge). The blade is 2.08" tall and is .13" thick at the bolster. It is 13" long from tip to the end of the handle.
The utility knife weighs 4.4 oz and has a blade length of 4-3/4 inches (4-1/2" long cutting edge). The blade is 1" tall and is .13" thick at the bolster. It is 9-3/4" long from tip to the end of the handle.
