Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives. A santoku is the primary chef's knife used in a Japanese home. Many Western cooks today have added to their kitchen favorites. A knife of many talents, a santoku easily handles all the basic kitchen cutting tasks. In fact, some people even prefer it to a European chef’s knife. Slightly shorter than the standard chef's knife, Greger's santoku is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to the santoku's versatility. This chef's knife is sure to be a favorite in your kitchen!
The blade was made from stainless damascus forged by Damasteel in Sweden. The kiritsuke tip provides a perfect shape for both rocking and slicing cuts. The blade was convex ground and heat treated to 60 Hrc by Greger. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods. The blade shows off the bold twist pattern damascus pattern. Forselius designed this high performance knife to be tremendously light and nimble.
The handle combines presentation grade masur birch with brown birch. The wood was carved and textured to provide a comfortable, secure grip. By using stabilized woods, Forselius ensures the knife will hold up well to the high demands of either a home or commercial kitchen. The bolster is formed from mokume gane. Brass and nickel are forged together to form an elegant damascene pattern.
The knife is accompanied by a custom saya. The saya is a wood scabbard for kitchen knives that provides a safe place to store and transport the knife.
