Description: Mastersmith Aaron Wilburn is equally well known for creating his high performing outdoor knives as his culinary masterpieces. This long chef's knife is absolutely exceptional and immediately grabs attention. The chef's knife is the workhorse of the kitchen and the primary goto knife for most cooks. The comfortable design is a fantastic multipurpose chopper. Whether slicing onions, chopping herbs, or finely mincing garlic, this chef's knife will get the task done.
The 11-1/2 inch blade has a perfect arc for chopping and slicing. The ladder pattern damascus blade incorporates 1084 and 15N20 carbon steels, forming intriguing damascene lines with beautiful contrast. The blade was then oil quenched three times. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. The deeply etched blade helps release food from the sidewalls.
The handle is contoured comfortably for a sturdy grip in the hand. Pink ivory wood (Berchemia zeyheri) is a rare African hardwood and predominantly grows in Zimbabwe, Mozambique and South Africa. The fiddleback figure is nicely complemented by the orange-pink wood. The scales are set on a full tang and fit perfectly to the nickel silver bolster. The resilient wood will hold up well to the heavy demands of either a professional or home kitchen. Loveless style fasteners are a nice finishing touch.
