Description: Washington knifemaker, C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He is currently apprenticing under Mastersmith David Lisch. David's eye for design clearly shines through Luis' work on this tremendous chef's knife. Additionally, Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found.
The Gokujo boning knife is perfect for deboning meat and removing bones from fish. Its slender, upswept blade will be great for filleting or just removing silver skin from the meats. The arced blade (like a samurai sword) enhances the ease of a single pass cut to remove flesh from the bone. It is a strong and sturdy knife, used to cut meat away from the bone, but not for cutting through bones.
Luis began forging this integral gokujo beginning with 1080 and 15N20 carbon steels. The fine patterned damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin with convex walls for clean, perfect cuts.
The handle is formed from presentation grade redwood burl. It is nicely sculpted for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. The stabilized wood will hold up beautifully to hard use, though this knife would also feel at home in most any collection. Thin black G10 and cupronickel spacers assist the handle to adjust to temperature and humidity changes in the kitchen.
The bolster is fully integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
