Description: This exceptional chef's knife is the work of Jeremy Spake of Portland, Oregon. Jeremy has been making knives since 2010. Jeremy's work is heavily influenced by Scandinavian knives. As he has begun making chef's knives, he has combined these Scandinavian influences inspiration drawn from Japanese chef's knife. The results have been truly spectacular.
This chef's knife is likely to become the primary knife used in your kitchen. The sleek blade provides finger clearance while being extremely dexterous. The nicely arced blade has a perfect shape for an efficient rocking chop. Whether chopping onions, mincing garlic, or slicing meats, this knife will be a perfect choice.
Jeremy hand forged the blade from 52100 carbon steel. Many knife makers and knife users include 52100 carbon steel among their favorite steels. 52100 takes on a superior cutting edge that just won't quit. The thin blade has a slight hollow grind which helps food not stick to the sides of the knife.
The stacked, Japanese influenced handle combines bog oak, sambar stag, and amboyna burl. The choice of woods is truly exceptional. The bog oak has been buried in a Nordic peat bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with the tannins in the wood, gradually giving it a distinct dark brown to almost black color. By using stabilized woods, Jeremy ensures the handle will hold up beautifully to the heavy demands of either a home or professional kitchen. A 410 stainless steel bolster seals the front of the handle. The handle is ambidextrous and will be equally comfortable for either a right- or left-handed user.
