Description: Renowned Japanese knifemaker Kikuo Matsuda has been grinding blades for over 40 years and is a 5th generation knife grinder. His unique, dramatic grinds are well known throughout the knife industry. His father runs a small workshop in Seki, grinding blades for production knife makers. Kiku joined his father's business at the age of 15 and learned the grinding technique from his father. Kiku's skill at the grinder has become legendary.
Hayataka is a massive chopper. It is handmade by Kikuo and shows his skill at its best. The blade, which measures in a just under 12-1/2 inches is surprisingly nimble for its size. Kikuo used OU-31 tool steel for the blade, which has exceptional edge holding. OU-31 is a Japanese PM (powdered metallurgical) steel with micro fine crystalline structure that embodies many of the best attributes needed for knives. The steel is hardened to 64 Hrc (very hard!) and has more than 3 times the toughness of D2. The blade features Kikuo's high performance Hamaguri (convex) grind for a long lasting, precision cutting edge along with his non-reflective disruptive acid finish. The thumb ramp is textured for a secure grip. The canvas Micarta handle is carved and set on the substantial full tang.
Accompanied by hand fitted Kydex sheath with Tek-Lok belt clip.
