Description: Journeyman Smith Erik Fritz has been working on chef's knife the last couple years and his knives are been amazing! His friendship with Mastersmith Bill Burke has been a real boon. Bill has worked with Erik to best understand the ideal geometry for chef's knives and has shared his coveted heat treating techniques for an ultra-high performance blade.
The 10 inch blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. A differential heat treatment results in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. A convex grind assists food release. The spine is nicely rounded for comfortable grip -- even when used for hours at a time. This knife is perfectly balanced and is not one that you'll want to put down.
The handle is formed from presentation grade stabilized rosewood burl. The warm toned wood has been nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the end of the handle.
Exceptional work throughout!
