This chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The blade is made from 154CM high carbon stainless steel. It is hardened and triple tempered to Hrc 58-59, then hand rubbed to a 600 grit heirloom quality satin finish. The blade is quite hard and takes an excellent edge. The spine is nicely rounded comfort when using for an extended period of time.
The handle is formed from stabilized California buckeye burl. This swirling wood grain has a nice mix of light and dark tones and is immediately captivating. The wood is contoured and carved to swell at the palm for a secure, comfortable grip. It utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold onto even with slippery hands. The handle offers several different grip options and is perfect for extended use. Modified serpentine filework travels along the tang between the grips. Three nickel silver pins assist in securing the scales to the full tang.
