The santoku is the traditional Japanese chefs knife. This comfortable design is a fantastic multipurpose chopper. The Santoku style has quickly become the new favorite for chefs in the West.
This chef's knife features a deep choil, or cut-out, for the forefinger to rest in. Typical of Jim's work, this makes the knife easy to hold even with slippery hands. The blade is made from 154-CM, high carbon stainless steel. It is hardened and triple tempered to about Rc 58-59, then hand rubbed to an heirloom quality satin finish. The spine is slightly rounded for a comfortable grip. The tang is hand fileworked in a modified bamboo pattern between the grips. The California buckeye burl handle is carved for a secure grip. By using stabilized wood, Jim ensures it will hold up well to a demanding kitchen environment. Exceptional work throughout!
