Description: Handmade by Jim Arbuckle, this fillet/boning knife is an excellent choice when removing meat from bones on both poultry, fish and red meats. This piece is handmade and one-of-a-kind - there's not another one like it in the world!
It utilizes a very deep choil, or semi-circular cut-out, in which the forefinger rests comfortably. This makes the knife easy to hold -- even in the demanding environment of a home or commercial kitchen -- or even out on a fishing trip. The blade is made from high performing, low care 154CM stainless steel and has a hand-rubbed satin finish. It was hardened and triple tempered to Rc 58-59 for excellent edge retention. A distal taper on the blade reduces weight and improves balance. Warm toned cocobolo DymondWood scales are set on a full tang for strength and durability. They are shaped to ensure a comfortable grip. Excellent fit and finish throughout!
