Description: This handmade chef's knife was created by California bladesmith Don Carlos Andrade. Don creates knives of supreme quality with a distinctive character. This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is well suited for slicing and chopping vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade was forged to shape from 1095 carbon steel. The gently undulating heat treatment line is created by a clay zone differential heat treatment. It shows the transition between the soft, supportive spine, and the hard, keen cutting edge. Because the blade is made from carbon steel, we recommend washing and drying the knife after use. A little camellia oil will help tremendously with maintenance.
The handle is made from green linen micarta and set with hand domed bronze pins. The handle is hand carved for a secure, comfortable grip. It swells at the palm, moves into a slender waist and flares toward the beak. The shape of the handle as well as the smoothed choil, offers a comfortable grip whether you choose to use the full handle or choke up on the blade for a professional pinch grip. Both the blade and tang are distal tapered for optimal balance.
