Description: This handmade chef's knife was created by California bladesmith Don Carlos Andrade. Don creates knives of supreme quality with a distinctive character. This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
His Pulsar chef's knife was forged from W2 carbon steel. Multiple quenches result in many separate heat treatment lines -- called a "rainbow" hamon by the maker. These lines show the transition between the soft, supportive spine, and the hard, keen cutting edge.
The handle is made from Arizona desert ironwood. Two circular ebony inlays are set in the center of the handle, surrounded by detailed hand carving. The effect suggests a neutron star with light waves emanating outward. Three domed brass pins secure the handle to the full tang. The handle swells at the palm, moves into a slender waist and flares toward the beak. The shape of the handle as well as the smoothed choil, offers a comfortable grip whether you choose to use the full handle or choke up on the blade for a professional pinch grip. Both the blade and tang are distal tapered for optimal balance.
