Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance utility knife is perfect for slicing fruits, vegetables, and meats. The thin blade produces a very clean, even cut without bruising the food being sliced.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
This very rare utility knife features a stainless damascus blade forged to shape by Bill. He has highly polished the damascus, for an elegant, heirloom quality. The bolster is formed by TIG welding stainless steel to the blade and results in tremendous durability. The handle is formed from a presentation grade rosewood and is completed with two pins. The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
