Description: Of the many makers that create Laguiole-style knives, Fontenille Pataud is generally regarded as the best. Each knife is handmade to precision specs and is a work of visual and textural art. All of their knives are made in their workshop in Thiers, France. Their team is comprised of eight skilled craftsmen and apprentices. Gilles Steinberg, owner and master craftsman, manages the group. Keeping the company's size small and employing only the best cutlers keeps the quality and exclusiveness of these knives at a premium level.
Before the development of the Laguiole Knife in the 19th century, French shepherds carried a knife called the "Capauchadou" (or "capujadou"). This knife was used for all daily tasks, from preparing lunch to care of their flocks of sheep. In place of the traditional Laguiole bee, this piece features a shamrock forged into the spring. The forged spring is hand chased with file work and is satin finished.
The premium olive wood scales are accented with brushed stainless steel bolsters. The blade is crafted from satin finished 12C27 premium stainless steel, hardened to 56Hrc. The spring has a blade stop mechanism that keeps the edge from contacting the back spring - this helps keep the edge sharp longer. Each knife features hand filework unique to the knife.
