Description: This exceptional hand forged chef's knife is the creation of California artist Don Carlos Andrade. This light knife is influenced by Japanese knives -- both in construction and balance. The carbon steel blade will have exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after use to avoid rust.
The antiqued blade was forged to shape from 1095 carbon steel. The blade has been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the results are unique and exceptional. A differential heat treatment results in a soft, supportive spine with a hard, keen, long lasting edge. A clear differential heat treating line is visible in the blade.
The maple burl handle is Don's take on the traditional octagonal Japanese handle. A desert ironwood ferrule and accent brings in contrasting tones. The resulting knife is one that you won't want to put down. The handle is completed with a bronze pin. Exceptional work throughout.
