Description: This exceptional hand forged chef's knife is the creation of California artist Don Carlos Andrade. It is an adaptation of Don's shallot knife design, but with a French style knife blade. The 7-1/4 inch blade is a perfect choice for use as a general purpose kitchen knife. From chopping onions and garlic to slicing tomatoes, this knife will do the job well. The upward canted handle is a nice touch and increases finger clearance while chopping over a cutting board. The carbon steel blade will have exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after use to avoid rust.
The antiqued blade was forged to shape from 1095 carbon steel. Both the blade and full tang have been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the results are unique and exceptional. A differential heat treatment ensures a soft, supportive spine with a keen, long lasting edge.
The African blackwood handle provides a sure, comfortable grip. Don carved and textured the wood, both making it visually interesting, but also providing a better grip, even with wet hands. The handle is completed with peened bronze pins. Exceptional work throughout.
