The European chef's knife (known as a gyuto in Japan) is well suited for use as a general purpose chef's knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the chef's knife is a great choice. The long blade is needed for the sawing motion required to cut meat and vegetables and the slim profile keeps the weight low and the balance right.
Bill began the blade by forging a many layered dragon's breath pattern damascus from carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The resulting blade is among the most captivating kitchen knives that I have ever seen!
The heat treatment follows the formula developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
The handle is sculpted from sheephorn, carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the bird's beak. Bill chose sheep horn for the unique property of it staying grippy, even in wet conditions. The natural grain of the sheep horn complements Bill's damascus perfectly. The knife has perfect balance and will be an utter joy to use.
