Based on the traditional Japanese nakiri, or vegetable cleaver, this striking one-of-a-kind cutting tool has the double-beveled edge geometry you'd expect from a Western knife, with the rectangular shape of a traditional Japanese knife ideal for chopping fruit and vegetables. The thin edge geometry makes it a precision tool, rather than the Arbuckle equivalent to a meat cleaver.
This piece features a very deep choil, or cut-out, for the forefinger to rest in. A hallmark of Jim's work, this makes the knife easy to hold -- even with slippery hands. The blade is made from ATS-34, high carbon stainless steel made by Hitachi. It is hardened and double tempered to Rc 58-59, then hand rubbed to a satin finish. Jim has hand-carved serpentine filework along the tang and part of the spine. This is not only decorative but adds a non-slip area on the back of the handle, aiding with the grip, even in the harsh environment of the kitchen. The blade is quite hard and takes an exceptional edge.
