Description: This stunning hand forged chef's knife is the creation of California artist Don Carlos Andrade. This 8-1/4 inch knife is perfect for use both at home or in a busy professional kitchen. The shape is inspired by the famous culinary knives of Germany, but with increased lightness and maneuverability. The carbon steel Don used ensures exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after use to avoid rust.
The satin finished blade was forged to shape from 1080 carbon steel. Both the blade and full tang have been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the process results in a blade which is both beautiful and astonishingly high-performing.
The desert ironwood handle provides a sure, comfortable grip. Don carved and jimped the ironwood, making it visually interesting, but also providing a better grip for the chef - even with wet hands. The handle is completed with four hammered bronze pins. Exceptional work throughout.
