Description: Handmade by Jim Arbuckle, this knife is an excellent piece for the chef that wants a paring or fruit knife that is as attractive as it is useful. This knife will be perfect for all sorts of detail tasks in the kitchen -- from slicing meats to chopping shallots. This knife is literally one-in-the-world. It utilizes a very deep choil (cut-out) for the forefinger to rest in, making it easy to hold onto even with slippery hands.
The blade is made from ATS-34 stainless steel and is given a hand-rubbed satin finish. It is hardened and double tempered to Rc 58-59 for excellent edge retention. It has modified serpentine filework along the tang (the spine between the grips). The spine has been rounded to reduce wear on fingers during extended use. Excellent fit and finish throughout!
