Description: Bill Burke, who was honored as a Mastersmith in June 2008, is best known for creating some of the best hunters that can be found anywhere. When he began making chef's knives, the results were exceptional and these have quickly become amongst the most desired of Mastersmith Bill Burke's work.
Paring knives are a great choice in the kitchen when doing detailed tasks such as slicing garlic, taking the eyes out of potatoes, and the heads off strawberries. It is one of the most important knives in the kitchen.
Like his hunting knives, this santoku was pre-tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed by Mastersmith Ed Fowler in conjunction with Bill and has been proven to create some of the sharpest and most long lasting edges found anywhere.
A differential heat treatment is clearly visible in the differential hardness line. This results in a soft, supportive spine and an extremely hard, long lasting edge. The handle is formed from a single piece of exhibition grade cocobolo. The wood has a twisted grain structure that includes a nice mix of warm and dark tones. The octagonal handle is a traditional shape for kitchen knife handles in Japan and provides a very comfortable grip that is quickly becoming preferred by Western chefs. This light knife has perfect balance and feels exceptional in the hand.
