Description: Andrew Smith began making knives in 2008 when he was only 15 years old. He started forging knives out of railroad spikes and tomahawks out of bar stock and ball peen hammers. For years this was all that he made. Today he makes all kinds of knives, but still has a deep love for making hawks. We were extremely pleased when we first met him at Blade Show 2021 and are excited to offer some of his work. Lately he has been creating some of the highest performing chef’s knives found anywhere.
This chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. The flatter profile of the back of the knife is perfect for chopping tasks. The 8-1/4 in. blade long enough to get most any task done, yet it is still easy to control.
The blade is an intricate mosaic damascus forged from 1084 and 15N20 carbon steels. Andrew's touchmark is on the left side of the blade. A convex grind assists with food release without wedging.
Showing his tremendous skill at the forge, the bolster is integral to the blade. Though this technique is regularly done in production knives, forging an integral bolster in a custom setting is extremely difficult and shows the maker's skill at its best. This technique allows the weight of the knife to be more center balanced. Th intricate pattern travels seamlessly from the bolster to the blade.
The stabilized curly koa handle has exceptionally beautiful figure. By using stabilized wood, Andrew ensures the handle will hold up well to the harsh demands of a professional kitchen. Bronze and black G-10 fiber spacers will help the handle adjust to humidity and temperature changes. This knife has tremendous balance -- it is a knife you won't want to put down!
