Description: Mastersmith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This chef's knife draws its inspiration from the Japanese kiritsuke gyuto.
This elegant chef's knife will be your primary knife in the kitchen. From slicing to chopping and minicing this will be your go-to knife.
The 9 inch blade has a perfect arc for chopping and slicing. The blade is expertly balanced. Aaron forged the blade to shape from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenched three times. Many thermal cycles and normalizing steps assure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
The presentation grade Arizona desert ironwood combines sapwood and heartwood. The scales are set on a full tang and fit perfectly to the nickel silver bolster. Ironwood of this quality and dramatic appearance is excedingly rare to find. Loveless style fasteners are a nice finishing touch.
Excellent fit and finish throughout!
