Description: This chef's knife was made by Colorado bladesmith Jayden Simisky. Jayden began forging at 15 years old, having taught himself how to welt at 11. Simisky is a Forged in Fire champion (season 8, episode 16). At the 2023 Blade Show in Atlanta, GA, Jayden was honored to become a journeyman smith.
This chef's knife is sure to be a kitchen favorite. At 6-1/2 inches, the blade is long enough to get most anything done, yet is light, nimble, and easy to control. This chef knife will be a great choice for general prep -- from mincing to chopping and slicing, it will be a great choice. At 2-18 inches tall, it has plenty of finger clearance while working over a cutting board.
This chef's knife is one of Jayden's journeyman smith test knives. When a maker tests to become a journeyman, they create five knives that are the height of their work. These five knives are then judged by established masters to determine if the maker's work is up to snuff. Often, prospective journeymen spend 2-3 times as long creating these five knives as they would generally do, as they know that their work will be poured over by the masters. These five knives are generally considered to be among the most collectable knives of a maker's career.
The blade was forged to shape from 1084 carbon steel and will have exceptional edge retention and resilience from chipping. The heirloom quality satin finish is meticulous. Simisky's touchmark is on the left side of the blade. The blade is beautifully thin for effortless chopping.
The handle is made from stabilized lychee wood. The contoured handle provides a secure, comfortable grip -- even when hands are wet. The handle is fit perfectly to the integral carbon steel guard. Creating an integral guard takes exceptional skill and provides increased strength and durability. Alternating black and red fiber spacers assist the the handle adjust to humidity and temperature changes.
