The Petit Gyuto is a general purpose chef's knife for the cook that prefers a smaller, easier to control knife. There's plenty belly curve to enable rocking cuts, which just adds to its versatility. Whether slicing, chopping, or mincing this will be your goto knife.
The 5-1/2 inch blade features a hand forged VG-10 stainless steel core (hagane). This is surrounded by many layers of high contrast damascus. This time consuming process creates a knife with outstanding edge holding and beauty without the brittleness of many other high performing steels.
The frame-constructed handle is inspired the Japanese ambidextrous octagonal handle. The stabilized and dyed masur birch has a dramatic swirling figure with a nice combination of light and dark tones. A black G-10 spacer and nickel silver bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
