Description: When I recently visited Mastersmiths Kevin and Heather Harvey, I was very pleased to see they had some of their knives available. Kevin and Heather teach bladesmithing courses, with students travelling from all over the world to learn their techniques. Kevin uses the Heavin Forge mark on his knives when he creates a knife while demonstrating for his classes. This is one such knife.
This chef's cleaver will make quick work of heavy tasks in the kitchen - effortlessly slicing chickens and winter squash in half!
The 12C27 stainless steel blade is convex ground for a strong, reliable edge. The grind is satin finished. The flats are forge finished. 12C27 stainless steel was specifically developed as a blade steel. It is a very fine grained alloy, ensuring a keen, long lasting edge.
Handle scales are red current burl (Searsia chirindensis). Red current grows throughout the eastern part of South Africa. The stabilized wood has a tremendous figure. The handle is nicely rounded to fill your hand and provide a comfortable grip. Black and white fiber spacers will help the wood adjust to humidity and temperature changes.
To keep the knife close at hand, a custom tooled leather sheath is included.
