Description: Niko Nicolaides is an American bladesmith from Detroit, Michigan. He was originally trained as a machinist running CAD and CAM machines and also has a background in working in professional kitchens. He combines this history to create high quality, functional kitchen knives that any chef would love to own. Today, Niko is a full time knifemaker. He specializes in hand forged chef knives with integral bolsters and often works with beautiful damascus patterns. He is definetely a maker to keep an eye out for.
This 6" kiritsuke gyuto chef's knife will be an absolute joy to use in the kitchen. The kiritsuke style tip provides an elegant, yet sharp tip for more detailed tasks. Anyone who prefers a slightly flatter cutting edge will absolutely love this knife. From chopping up fruits and vegetables to slicing meats and cheese, this nimble tool is sure to be your go-to knife!
This 6 inch blade is forged from Niko's own damascus san mai forged from 1084 and 15n20 carbon steels surrounding a 52100 carbon steel core. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make modern knives. The spine is nicely rounded for a comfortable pinch grip. Niko's makers mark can be seen on the right side of the blade. We recommend using camellia oil to protect the blade from rusting.
The bolster is fully integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. The front of the bolster is nicely curved to encourage a comfortable pinch grip.
The western style handle is made from yellow Micarta. It is nicely contoured for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. The knife is exceptionally balanced and will remain comfortable even after hours of heavy use.
Excellent work throughout!
